A home cook shared his quick and easy recipe for a vegetable soup that’s perfect for losing weight.
Foodie Matt Boxall from the UK demonstrated how to prepare the hearty meal from seven ingredients – carrots, brown onions, garlic, ground coriander, cumin, lemon juice and vegetable broth.
Not only is the delicious soup a healthy option for dinner, but each serving is just 100 calories.

For the meal, Matt cut the carrots in half, diced the onion, and then placed the veggies and spices on a baking sheet.
He then put the tray in the preheated oven at 200 degrees Celsius for 20 minutes until the vegetables were cooked.
Next, he carefully poured the roasted veggies into a Nutribullet blender, adding a generous squeeze of lemon juice and 16 ounces of stock.
All the ingredients were blended in the blender into a smooth, creamy soup.
Matt served the delicious dish in a large bowl, then topped it with a dollop of plan yogurt — though this is optional.
The recipe yields two servings of 100 calories each.
Other home cooks thanked Matt for sharing the recipe and couldn’t wait to try it for themselves.
“This looks great, a good use of the older carrots,” wrote one.
